Here is the graph of a polynomial of degree 3. Shouldn't it cross the x-axis 3 times?

Not necessarily. The polynomial does have 3 zeroes over the complex numbers, but from the graph we can see that 2 of the zeroes are complex. The real zero is the point where the graph crosses the x-axis.
